This rib of beef comes from the Charra variety (result of the improvement of the crossing between Morucha and/or Avileña native cows with Charolais). They are raised in the same environment as the Iberian pigs, in the middle of the Dehesa. The producer, after more than 30 years in beef, has exceptional facilities for dry aging.

He offers us the best selection of cuts of beef, those with good fat coverage and an excellent level of marbling.
