What you need to know:

The sturgeon producing this caviar is the result of a cross between the Schrenki sturgeon and Huso dauricus, also know as the Kaluga sturgeon, no less than the closest (and only!) cousin to the Beluga sturgeon (Huso huso). Lake-farmed in a province to the south west of Shanghai, this caviar has a fairly firm texture that holds up well, and an appealing greenish colour with gold highlights, for a caviar that is both fine and elegant.
