This caviar comes from the Huso Huso sturgeon, between the ages of 20 and 25, which can weigh over 100 kilos. It is raised on a fish farm in Bulgaria, our exclusive partner, in the middle of a reservoir fed by melting snow.
Its grain is the largest of all caviars. It has a powerful taste and a creamy texture. Its color varies in shades of light gray.
Beluga sturgeon is the best known because it is the rarest and therefore the most expensive. Beluga caviar is most often appreciated by consumers nostalgic for wild caviar.
Culinary combinations
Caviar is usually enjoyed simply by the spoonful with a glass of vodka, a glass of champagne or a glass of dry white wine. Blinis, eggs, potatoes, fish and seafood are the best combinations. For something more original, pair with veal or beef tartare.
