They are made in Catalonia, in the Penedes, and have been on the table of “Nobels” for 10 years.
Made from a single grape variety, Chardonnay for the white and Cabernet Sauvignon for the red, they begin with a natural acidification process before incorporating the must of the grape variety that composes them.
These "sweet and sour" vinegars present a perfect harmony between a well-controlled acidity (6,5%) and a fruitiness drawn from their grape variety.
