A dish for the King (or Queen!) in the Netherlands, Matjes are actually young herring that have not yet spawned, caught between April/May and the end of June in the cold waters of the Southern Arctic, off of Greenland and Iceland.
The texture is incredibly smooth and melting, and they have a gentle, subtle and refined flavour.
Best enjoyed very simply, on a slice of bread with a dollop of thick fresh cream.
