The secreto is a very marbled piece of pork, which is located near the shoulder (only the Spanish cut highlights this part). Difficult to remove, hence its name "secret", it offers incredible tenderness thanks to its delicate texture.
Like pluma, it is delicious grilled on the plancha or in a very hot pan. Savor it with a pinch of fleur de sel.
