Freshly caught in the Gulf of Cantabria, the squid is then prepared using à recipe that has seen passed down from generation to generation.
Cooked in it's own juices, stewed with mild onions, deglazed with its ink, the squid is cooked to perfection.
Tender, supple and incredibly tasty, it only needs to be warmed in a pan, then accompanied by white rice in order to produce a dish worthy of fine dining.
