Almadraba is a very artisanal fishing technique aging from the time of the Phoenicians.
Nowadays, only very few villages have conserved this art of fishing and it is in the region of Barbate, located at the entrance to the Strait of Gibraltar, Atlantic side, that bluefin tuna are caught during the Almadraba of "la ida" (the outward journey) between April and June.
The belly is exquisite, melting, unctuous.
Fishing spot : Atlantic ocean (Barbate)
Eaten on a lightly toasted bread accompanied by a few scales of salt and a tear of Moscatel vinegar.
Enjoy!
