A Denomination of Origin in its own right, this unique wine is made under sail, and aged for 4 years in American oak barrels. It forges its specific character from the influences of a milder, wetter Sanluqueño microclimate, conditioned by the Guadalquivir River, the Atlantic Ocean and marshes.
Tasting notes: Subtly salty, slightly bitter. Floral aromas, followed by characteristic markers: apple, almond and walnut. Beautiful minerality, and extremely delicate acid notes, for intense freshness.
Serving temperature: As desired: 5°C-7°C or 12°C-14°C
Food & wine pairing : The perfect match for Bellota Ham. Well-ripened pressed cheeses. Seafood. And for a surprising twist on established conventions, with Foie gras!
